I love this salad I created a few months ago. So much so, that I eat it just about every single day during the week!
It's a breeze to prepare, it's light (yet dense and satisfying), and I always feel energized after I eat it!
I'm naming it Sunny Salad because it's sprinkled with sunflower seeds, and I enjoy eating it while sitting outside in the sun!
Just chop up romaine lettuce, 1 medium avocado, and 1 medium tomato! I keep all of these things in the fridge so they are nice and cold. Put it in your favorite bowl! Sprinkle a handful of sunflower seeds on top! Drizzle with raspberry dressing, and a little balsamic glaze! Finish with a light sprinkle of sea salt!
The crunch of the sunflower seeds, the creaminess of the avocado, the fresh cold tomato, and sweetness of the dressing (with a little hint of saltiness!) is so yummy that I forget it's so healthy too!
Filling my body with healthy & satisfying fuel is a must to power me through the day! This salad couldn't be any more perfect for an active gal on the go!
