I'm broadening my lunch horizons! For the past few months I have been eating my "go to" simple lunch- my awesomely easy Sunny Salad ! But it's time to switch it up- and so, I finally made something off of this awesome cooking blog- Holly's Creative Kitchen ! I'm a huge Mushroom lover, so of course I had to try the Mushroom Burgers! They were out of this world delicious, and so super healthy! My favorite part of this recipe (aside from the mushrooms!) are the oats that added amazing texture and gooey yummy mushiness. Instead of eating them on a roll, I paired them with bed of mixed greens, sprouts, cherrie tomatoes, a little parmesan cheese, and raspberry vinaigrette! Also, I made a few tweaks to the recipe- I used as little olive oil as possible, panko bread crumbs instead of bread crumbs, and 4 egg whites opposed to 2 whole eggs. As far as the mushrooms, I used shiitake mushrooms, portobello mushrooms, and plain white mushrooms!
Hands down, the best lunch I ever made for myself! It's requires just a little cooking time, but totally worth it! Be sure to make extra burgers so you can enjoy them the next day, too!
