I always thought that raw nuts with their skin were the most health beneficial. I believed that the skin was where most of the fiber and vitamins were hiding. I was wrong! The skin protects the nut in nature, but also limits the nutrients absorbed when we eat them.
Soaking nuts unlocks their health benefits by neutralizing their enzymes, releasing more of their vitamins, and making the nut more easily absorbed by your body. My sister-in-law is the person who brought this fun fact to my attention. She made me a delicious breakfast that was so yummy with so many different textures. It was also very gentle on my stomach. It was corn flakes with a little milk, sprinkled with soaked almonds, sliced banana, bits of apple and dates, and filled with love! I ate it along with my 3 year old niece- so it's not only healthy and delicious, but child approved too!
